I’ve had a long work day today, and before that, I had the most exhausting workout. So, I got home from the office, took care of a few phone calls, and threw together my favourite, go-to easiest kind of dinner ever.
I’ve recently started ordering my groceries to the office so that I don’t have to go to the store during rush hour. Don’t get me wrong–I love grocery shopping, I used to even consider it a hobby back in the day [click!]. Haha. But seriously, I’ve actually been close to tears–between heat, pollution, loud honking, heavy bags, not a single cab in sight, and the Uber app continuously throwing a random error, or the driver being lost. Since my friend Paulina introduced me to online groceries, my life has been forever changed (and I mean that in the most sincere way possible).
This is how simple the soup is: 2 cans of crushed tomatoes, a dash of light cream, 1 chopped large yellow onion, chopped garlic, chopped basil, 1 vegetable cube+water, salt, pepper
Cook the garlic and onion in olive oil on medium heat until it starts getting colour…
…then throw in everything else, bring to a boil, and let simmer for about 10-15 min
Whenever I’m cooking I like to FaceTime with my mom at the same time. I’ll tell her about my day, she tells me about hers, we catch up on life, and she’ll give feedback on whatever I’m making while I’m making it. A great bonding tip for anyone with loved ones across the world. And another favourite tip is to listen to a nice podcast while you cook. That’s also so great.
After 10-15 min of simmering (love that word?), remove the pan from the stove, let it cool off slightly, then use a hand-blender to turn it into a smooth, even soup. I usually make a yummy feta cream to add once the soup served. I didn’t do it today because I didn’t have feta cheese at home. But you should – just blend together 2/3 of greek yoghurt, 1/3 feta cheese, salt, pepper. Keep in the fridge for like 20 min before having it.
Now, I’ve finally landed on my couch. I’m about to book a last flight for me and Saif between Copenhagen and London, then off to bed.
