One Pot Pasta

My usual routine for weeknights when I don’t have anything social planned is to head from work straight to the grocery store. Is there anything more satisfying than a full fridge? Don’t think so! Rule #1 though – make sure you know what you’re getting beforehand. Whenever I don’t plan my grocery shopping in advance I end up getting half the store and throwing it away a week later… Anyway, off I go, from the grocery store, home, to cook while catching up with someone over FaceTime or the latest episode of one of my favourite podcasts.

Tonight’s dinner was a One-Pot-Pasta dish which I made for the first time. Honestly one of the easiest and yummiest things ever. Basically, One Pot Pasta means you make the sauce, and cook the pasta in the sauce instead of the regular pot of boiling water. Total flavour explosion, plus al dente is much easier to achieve when cooked directly in a sauce. Who knew?

…one of my favourite smells in the world: garlic in olive oil on medium heat…

I’m a real tomato freak and always add extra to any recipe.

Voila! It really was so delicious. Can’t wait to have someone over to try this!

After dinner I treated myself to some of my favourite sweets and caught up with Harriet and mom on FaceTime. I really can’t wait to get home this summer–its been three years since I was home during this time of the year, and I can’t wait for Saif to experience it, too. As soon as I have a minute free I keep looking up things to do and see while we’re there. Getting older and coming home is a little like rediscovering the amazing things about where you’re from and falling back in love with it every time…

I got these chunky sandals from Maison Margiela in Tokyo when we were there in April. I fell in love immediately, having been looking for something that works in the office but also that’s comfortable to walk in on the clumsy streets of Bombay. Lucky me–the buckle had a tiny bit of rust on one of the sandals, and the store was shutting down on top of that, so here it goes–I got them at a crazy 90% off! From $700 to less than $100 – sold! Quite a steal, if you ask me, and perfect to wear with anything from casual jeans to a maxi dress.

Yesterday was a great day. Fridays generally are, but it was an exceptionally good Friday for no specific reason. I spent about 11 hours in the office–by the time I got home it was already kind of late and I quickly threw together a snack (read: a glass of Pinot Noir and a bag of salted chips + greek yoghurt-garlic dip) and got ready for the night. I know there are girls who take their sweet time when getting ready for a night out–me on the other hand, usually feel like I have “so much time” until there is about 10 minutes left to go, at which point I just quickly throw on whatever comes to mind, put my hair up in a bun, and rush out. Off I went anyway, in an Uber to meet Saif at Bombay Canteen.

Every time I go to Bombay Canteen I feel like I’m having one of the best dining experiences of my life. The ambiance, the food, the staff and the crowd–5 solid stars every time. There’s something really special about it. There are a lot of great recommendations in the city, but if someone came to Bombay for one night only, Bombay Canteen would be your best bet. The Soona Mahal is one of the best drinks I’ve ever had–tequila base with fresh pineapple juice and lime. Delicious!
